Gluten-Free Chocolate Chess Pie

1) Preheat oven to 350 degrees F. In a medium sized mixing bowl, beat:
    3 eggs

2) Add and mix:
    5 Tbs evaporated milk (not fresh or sweetened condensed)
    1 Tbs apple cider vinegar
    2 tsp pure vanilla extract
    pinch of salt
    1/2 stick butter, melted

3) Add and mix:
    1 C sugar sifted with 1/4 C cocoa powder

4) Pour into a 9" pie shell (homemade or store bought) and bake for 38-40 minutes or until just set and browned.  Serve at room temperature or chilled, garnished with whipped cream.
