What is a Chocolate Truffle?
A chocolate truffle is a classic European style chocolate confectionery. A chocolate truffle is always round - a chocolate ball. A chocolate truffle is enrobed in chocolate...this can be by hand-dipping or machine enrobing. (Cocopotamus dark chocolate fudge truffles are always hand-dipped!)
What is Inside a Chocolate Truffle?
Some people think that the only filling for a chocolate truffle is ganache. (Ganache is a stiff chocolate mixture made with cream & chocolate couverture.) The most classic old-school chocolate truffle is a chocolate ganache ball which is coated with cocoa powder.
But, it is not the only way to make a chocolate truffle! In fact, there can be many different fillings for truffles including nuts, liqueurs, creams, and nougats. In Europe (especially in Belgium), nuts are commonly used and truffles can be called "pralines". (Don't tell the guys in Louisiana!)
Our Cocopotamus chocolate truffles are filled with hand-made dark chocolate fudge made with dark chocolate and some of the best ingredients in the world, including natural and organic flavors.
What Do Chocolate Truffles Look Like?
As mentioned, chocolate truffles are always round balls. However, they can have a huge variety of looks. This is because after enrobing the chocolate truffle in chocolate, the chocolatier can apply a variety of toppings.
At Cocopotamus, some of our dark chocolate fudge truffles are rolled truffles. This means we roll them in fun toppings while they are freshly hand-dipped in dark chocolate. Some of our "rolls"? Peppermint sugar, for our "Santa's Addiction" dark chocolate fudge truffle. Cinnamon sugar, for our "Naked Hottie" dark chocolate fudge truffle. And even Japanese matcha green tea sugar, for our special chocolate truffle called "Sumos Never Sleep".
We also make dark chocolate fudge truffles that are hand-painted. After we make Cocopotamus chocolate truffles such as "Razzmanian Devil", "Planet Marz," or "Kiss Blarney", we enrobe them in dark chocolate by hand-dipping them. When the freshly dipped chocolate truffles are dry, we paint them with shimmering edible glitter in a variety of colors.
Some of our Cocopotamus chocolate truffles are decorated with toppings after we hand-dip them in dark chocolate. "Yo-ho-ho" is sprinkled with natural turbinado sugar. Our irresistible "Cupcake" chocolate truffle has white chocolate frosting piped onto it, and then is sprinkled with natural colored sugars. And our "Hottie" chocolate truffle? That's got a sprinklig of red chili on top!
